Tomato and Basil Soup

Tomato and Basil Soup

  • 1 tbsp olive oil
  • 1 large brown onion, chopped
  • 2 garlic cloves, crushed
  • 600g tomatoes, Roma or Grape, chopped
  • 1 tsp vegetable stock
  • 1/2 cup fresh basil leaves
  • Salt and pepper to taste


  1. Heat olive oil in a large saucepan over medium to high heat
  2. Add onion, garlic and stir together for about 1 minute or until onion has softened
  3. Add tomatoes, salt, pepper, vegetable stock and cover. Bring to the boil, then reduce heat to medium-low
  4. Simmer for 15 to 20 minutes
  5. Remove saucepan from stove top, add basil and blend using a hand blender
  6. Blend on low-medium speed until smooth
  7. Serve with toast optional
