Banana and Poppy Seed Bread

What’s better than banana bread? Banana and poppy seed bread of course.

BANANA AND POPPY SEED BREAD

Serves: 6

Ingredients

  • Mashed bananas, extra ripe & peeled to make 1 cup)
  • 1 cup sugar
  • 1⁄2 cup vegan butter, softened
  • 2 eggs (or egg replacement)
  • 1 tsp orange peel, finely grated
  • 2 cups flour
  • 2 tsp baking powder
  • 1⁄2 tsp salt
  • 1⁄2 tsp cinnamon
  • 1⁄4 cup poppy seed

Directons

  1. Pre heat oven at 180° C. Grease or spray 9x5 inch loaf pan and set aside
  2. Mash or puree bananas with a food processor or blender until all pieces are broken down and you have about 1 cup of banana in total. If not, then add enough banana to equal one cup
  3. In a medium bowl, mix sugar and butter together until light and fluffy
  4. Add egg or egg replacement (see page 23), grated orange peel to mix
  5. Combine the flour, baking powder, salt and cinnamon
  6. Mix all ingredients together and stir until evenly moistened
  7. Hand stir in the poppy seeds
  8. Pour into a well-greased (or sprayed) 9x5 inch loaf pan
  9. Bake at 180° C for 30-40 minutes until pick inserted in center comes out clean
  10. Cool in pan for 10-15 minutes before turning out onto a wire rack to completely cool
